Crispy feta cheese with sesame, thyme honey & grilled vegetables with aged Balsamic vinegar & Madagascar vanilla reduction
Feta Cheese
  • 800 gr feta
  • 8 phyllo pastry
  • 240 gr thyme honey
  • 80 gr white sesame
  • 40 gr black sesame
  • 0.5 lt Balsamic vinegar
  • 0.5 kilo granulated sugar
  • 1/2 Madagascar vanilla
  • 1 small cinamon stick
  • 1 star anise
  • 1 orange zest
Grilled Vegetables
  • 3 aubergines
  • 4 courgettes
  • 16 cherry tomatoes
  • 5 colorful peppers
Of the Balsamic
  • STEP 01
    Place the balsamic vinegar, cinnamon stick, star anise, sugar and orange peel in a saucepan. Scrape half of the vanilla bean, removing the seeds with a knife. Add to the vinegar, dropping in the vanilla bean. Boil the syrup until it reaches 110 degrees C and then let it cool down and set.
Of the Grilled Vegetables
  • STEP 02
    Cut the vegetables into slices and stir with the olive oil, vinegar, salt and pepper. Grill.
Of the Crispy feta cheese
  • STEP 03
    Cut the feta cheese into thin sticks. Unfold the phyllo pastry and cut in the middle. Place one pastry sheet over the other, after brushing on some olive oil. Place a stick of feta cheese at the bottom of the sheet and wrap, making a roll. Close after brushing a little water with flour on the edges to help it stick.
  • STEP 04
    Deep-fry the feta cheese rolls until golden. Continue by baking for 3-4 minutes in the oven to cook the feta cheese inside.
